Thinly slice ripe tomato, yellow onion and zucchini. Bake in a covered dish at 400 degrees for 20-25 minutes. Remove cover and sprinkle cooked mushroom and veggies with a layer of cheese. Bake 3 minutes and serve. I lightly salted the tomatoes before adding the layer of onions and used extra sharp cheddar cheese. Hubby was very happy with dinner tonight.
